Back To School Lunch Ideas For Kids-Kami Basics

It's back to school time. Being a mom, you definitely have mixed emotions when seeing you kid back to school and not around you anymore. You now also have to come back to early morning routine with many things to prepare: breakfast, lunch, drive your kids to school, etc. 

Kids are fickle, some certain days they love apples but the next day they hate this for odd reasons. Therefore, you should have various recipes that your kids can choose to keep lunch interesting.

1. The ultimate avocado toast

Kids usually love creamy avocado so this toast recipe is top! 

Ingredients:

  • 2 slices of toast
  • 1 avocado (ripe avocado is preferred)
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • ¼ tsp red pepper flakes
  • ¼ tsp sea salt

Instruction:

  • Toast your bread slices to your desired level.
  • Cut, pit and remove the peel. Mash them with a fork. Mix in lemon juice when mashing. 
  • Divide the avocado mixture between the two slices of toast. Drizzle olive oil over the top of each slice. Add a sprinkle of the red pepper flakes and salt to each piece.
  • Enjoy the avocado toast

2. Pizza wrap sandwich

This is one of the simple lunch that you can prepare for your kids with just three ingredients. 

Ingredients:

  • 2 flour tortillas
  • 3 tbsp spaghetti sauce
  • 1 cup shredded mozzarella 

Instruction:

  • Preheat oven to 400 F. Spray tortilla wraps with olive oil cooking spray.
  • Put tortillas on a cookie sheet on the center rack of the oven and bake for 5 minutes in order to toast the tortillas slightly.
  • Spread one and a half tbsp spaghetti sauce on each tortilla. Top with cheese and Italian seasoning. Return tortilla wraps to the oven. Bake again for 5 to 7 minutes, until cheese is melted, golden and bubbly.
  • Remove tortillas from the oven. Let cool 2 minutes, then it is ready for your kids lunch.

3. Vegan Asian Rice Salad

This vegan asian salad is perfect lunch to boost your kids energy. With the rice and plenty of vegetables, this is a nutritious vegetarian meal.

Ingredients:

  • ¼ cup peanut oil (or you can use alternative oil as you want)
  • 1 tsp. kosher salt (or sea salt)
  • 1/2 tsp. freshly ground black pepper
  • 1 tsp. sugar
  • 1 tsp. sesame oil
  • 4 cups cooked brown rice
  • 1 carrot (diced)
  • 1/2 cup snow peas (chopped)
  • 1/4 cup rice vinegar
  • 1 stalk celery (diced)
  • 1/2 red or yellow bell pepper (diced)
  • 3 green onions (chopped)
  • Optional: 1/2 cup corn kernels
  • Garnish: 2 tbsp. chopped fresh parsley or cilantro

Instruction:

  • Use a small to combine the peanut oil, salt, black pepper, sugar, and sesame oil and then whisk until the sugar dissolves.
  • Pour this mixture over the chilled brown rice in a larger bowl. Toss gently to coat the rice, then set the bowl aside.
  • Boil the diced carrots, snow peas, and corn for 1 to 2 minutes, until they become tender. Plunge them into an ice bath to flash chill them and halt the cooking process, drain them, then stir the vegetables into the rice.
  • Add the remaining ingredients (the rice vinegar, the chopped green onions and toss) to distribute the vegetables throughout the rice.
  • Serve the salad chilled and garnished with chopped fresh parsley or cilantro, if you want

4. Cucumber and cream cheese sandwich

If your kids are cucumber and cream cheese lovers, you absolutely add this kind of sandwich in the lunch list for them!

Ingredients:

  • One loaf white bread
  • ½ cup of cream cheese 
  • 1 cucumber
  • Lemon juice, salt, pepper, dried parsley to taste

Instruction:

  • Spread bread slices evenly with cream cheese
  • Cover one side of the sandwich with sliced cucumber.
  • Season with lemon juice, salt, pepper and herbs.
  • Put the slices together, cut off the crusts, and slice the sandwich diagonally two times to create four triangle finger sandwiches.

5. Ham and cheese pockets

    Easily- made ham cheese pockets would be ideal for your busy days.

    Ingredients: 

    • Frozen puff pastry sheets
    • Cheddar cheese slices
    • Ham slices
    • Egg
    • Mustard (optional)

    Instruction:

    • Cut pastry sheets into four parts and roll them out a little bit in order to have a space for ham and cheese
    • Add your cheese, ham and mustard and then brush whisked egg into half of square corner so you can fold it over and seal the dough together
    • Fold over the top half of dough and pinch the edges or use a fork to seal them together.  Cut a few slits on top for ventilation and brush the tops with the whisked egg.
    • Bake at 400 degrees Fahrenheit for 15 to 25 minutes.

    To pack these lunch meals for your kids, it's better to use reusable sandwich wrapper or non- plastic lunch box instead of single use plastic one. This helps not only to save your children’ health but also contribute to reduce plastic waste.
